An incredible blend of flowers, citrus fruits, and caramelized touches. The aroma of orange blossom follows us throughout the sensory experience. In the mouth, we notice fruity flavors and citrus notes like tangerine and kumquat for a well-integrated medium acidity. The body is juicy and maintains a good intensity with sweet and creamy notes like dulce de leche. The cherries are picked and taken to the farm’s processing facilities where they are sorted and washed. The cherries are placed in a tank to ferment for 24 hours. Then they are pulped and placed in tanks for a second fermentation of 48 hours. After the second fermentation, the cherries are rinsed and placed on African beds inside greenhouse tunnels to dry until the humidity reaches 9-10.5%. The temperature and humidity inside the greenhouse tunnels are closely monitored.
